As you can see, in #TheNowFamily we continue working even if it’s full August. We might miss some Vitamine D, but we damn love our job! Well, we would prefer to be somewhere on a dessert island chilling and relaxing, but… You know… We can survive! Friends sending us pictures from their holidays are the best ones, though…
For those of you who might need some detox time out of the office and recharge their batteries for the upcoming September, you might think about your diet, as well.
We are big fans of the healthy food and we tested some of the most delicious recipes you might find surfing the internet just for you! They are simple, easy to prepare, requiring just a little time and most of all, your kids will love them!
Are you ready to get your hands on some veggies?
To start with, there is nothing better then a Gazpacho, a cold soup originally from Spain (as #TheNowFamily here)!
For this all you’ll need is:
- 2 avocados
- 1 cucumber
- 1 garlic clove
- 1 yoghurt 0%
- 1 dash of olive oil or a spoon of coconut oil
- Salt, pepper
The vantage of this recipe? You have no excuses in saying you’re bad at cooking.
All you have to do is to peel off the cucumber and cut it in small pieces. Do the same for the garlic clove. Cut the avocado in two and take off the seed. The avocado is rich in the good fats optimal for your skin and tissues :). Place the ingredients in the mixer and add the olive oil or the coconut oil. Add the yogurt at the end and here you have it! Serve fresh!
Courgettes pizza boat
Courgette pizza is a great way of enjoying a comfy food in a healthy way. You’ll need a little time in your kitchen, some soft music and lots of love.
- 2 courgettes
- a small can of tomato sauce
- 2 buffalo mozzarella balls
- some cherry tomatoe
- oregano and / or basil
Preheat oven to 180 ° C.
Wash the courgettes, cut them in half and remove the seeds with a small spoon, then pre-bake blind for 10 minutes.
Meanwhile, cut the mozzarella into slices and the cherry tomatoes in half.
Once pre-cooked the courgettes start garnishing. Place in the bottom a little tomato sauce, place the mozzarella slices and cherry tomatoes, sprinkle with oregano and / or basil.
Bake for 20 minutes.
Et voilà! Now you can enjoy :)

Check these delicious brownies defining themselves healthy ones!
- 180 g dark baking chocolate
- 3 eggs
- 80 g of whole sugar
- 80g semi-complete rice flour
- 2 c. Coffee baking powder
- 4 c. tablespoons solid coconut oil
- 2 handfuls of pumpkin seeds
Preheat the oven to 180 ° C. Melt 100g of chocolate in a double boiler. Beat eggs with sugar until the mixture is frothy. Add the flour and yeast. Once the melted chocolate, add 3 tbsp. tablespoon of coconut oil and mix in the water bath until the oil is melted. Mix the remaining ingredients and pour the batter into a gratin dish not too wide, lined with baking paper (the dough should be 2-3 cm in height). Bake for 20 minutes. Remove the dish off the cake without baking paper, put on a plate and let cool.
Melt the remaining 80g of chocolate in double boiler, then add 1 tsp. tablespoons of coconut oil. Coat the cake with melted chocolate and sprinkle with pumpkin seeds. Let cool before cutting.
Here you go. Now you have no excuses to cook healthy this summer!
